Ingredients
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 2 tablespoons almond flour
- 1 tablespoon grated Parmesan cheese
- 4 slices sliced turkey breast
- 1/2 cup sauerkraut, well-drained
- 1/4 cup sugar-free Thousand Island dressing
- 4 slices Swiss cheese
- Olive oil spray
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, combine mozzarella cheese, eggs, almond flour, and Parmesan cheese. Mix well until a dough forms.
- Divide the dough into four equal portions. On the prepared baking sheet, spread each portion into a thin circle (about 6-8 inches in diameter).
- Bake for 12-15 minutes, or until the edges are golden brown and the chaffles are set.
- Remove from oven and let cool slightly. Carefully peel the chaffles off the parchment paper.
- Spread each chaffle with sugar-free Thousand Island dressing. Top with a slice of Swiss cheese, sliced turkey, and sauerkraut.
- Roll up each chaffle tightly and place seam-side down on the baking sheet.
- Spray the roll-ups lightly with olive oil spray and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- Let cool slightly before serving. Enjoy!
Notes
For extra crispiness, broil for the last minute, watching carefully to prevent burning. You can substitute the turkey with shaved beef. Make sure the sauerkraut is well-drained to prevent soggy roll-ups.
