Instructions
- Prepare the cucumber: Wash and slice the cucumber into approximately 1/2-inch thick rounds. Pat the slices dry with paper towels to remove excess moisture.
- Make the cream cheese mixture: In a medium bowl, combine the softened cream cheese, chopped dill, chopped chives, lemon juice, garlic powder, salt, and pepper. Mix well until all ingredients are fully incorporated and the mixture is smooth and creamy.
- Assemble the cucumber bites: Spread a generous spoonful of the cream cheese mixture onto each cucumber slice. Sprinkle each bite with everything bagel seasoning.
- Serve immediately or chill for later: Arrange the cucumber bites on a serving platter and serve immediately for the best crispness. Alternatively, you can chill them in the refrigerator for up to 2 hours before serving. Garnish with extra dill or chives, if desired.
Notes
For the best flavor, use fresh dill and chives. To save time, purchase pre-sliced cucumbers. If you don’t have everything bagel seasoning, you can substitute with a mix of sesame seeds, poppy seeds, dried garlic, dried onion, and salt. Leftover cucumber bites can be stored in an airtight container in the refrigerator for up to 24 hours, but the cucumbers may become slightly soggy over time.
