Ingredients
- 2 medium sweet potatoes, peeled and sliced into 1/2-inch thick rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup crumbled feta cheese
- 2 tablespoons honey
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
- Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until the sweet potatoes are tender and slightly browned, flipping halfway through.
- Remove from oven and transfer to a serving plate. Sprinkle with feta cheese and drizzle with honey.

Notes
